Cantina di Passoni

Cantina di Passoni is situated just north of San Gimignano in Tuscany, against the backdrop of soaring medieval towers for which the city is famous. The Milan-born Francesca Passoni is the driving force behind this winery. In 1990, she and husband Giuseppe set about restoring the Cantina di Passoni estate and its accompanying convent to their original splendor. Fourteen years later, the project is nearing completion. With the aid of Franco Bernabei, one of Italy's top oenologists, the Passoni's produce a line of distinctive wines that stand out in a region where wines are often seen as an accessory to the surroundings. Cantina di Passoni's Vernaccia is a case in point. As immaculate as the premises, this Vernaccia demonstrates that remarkable purity and almond-like aftertaste that a good Vernaccia should have. 

2005 Vernaccia di San Gimignano DOCG

Winemaking, Vineyards & Growing Season:
Medium texture soil with fossils. The vines are trained using the guyot shape. Green pruning is adopted in order to limit the growth of each vine. The grapes are harvested in the month of September by hand after having been selected during the month of August. The grapes are crushed in a modern pneumatic press. Fermentation takes place in stainless steel tanks at a controlled temperature of 18 to 20 degrees. After fermentation the wine is decanted many times in order to clarify. After 4 months mellowing in the stainless steel tanks the wine is bottled and aged in to improve its characteristics.
